  1. Pluck and draw the partridges.
  2. Wash them thoroughly.
  3. Put them into a saucepan with plenty of cold water, and a little salt.
  4. Bring them to the boil, and skim them well.
  5. Then let them simmer gently till they are tender, which will be in about an hour, or an hour and a half, according to their size and age.
  6. When they are done, take them out of the water, and send them to the table, with a good brown gravy.
