  2. Dry them well with a cloth.
  3. Season them with pepper, salt, and mace.
  4. Put them into a pot with butter.
  5. Tie your pot down with paper.
  6. Bake them in a moderate oven.
  7. When they come out, drain the gravy from them.
  8. Put them into your pots.
  9. Pour clarified butter over them.
  10. Cover them close.

Small Birds. HAVING picked and glutted your birds, dry them well with a cloth, and season them with pepper, salt, and mace. Then put them into a pot with butter, tie your pot down with paper, and bake them in a moderate oven. When they come out, drain the gravy from them, and put them into your pots.
