TAKE two ounces of bitter, and one pound of sweet almonds, blanched and beat, with a little rose or orange flower water, and the white of one egg; half a pound of sifted loaf sugar, eight yolks and three whites of eggs, the juice of half a lemon and the rind grated. Mix the whole well together, and either bake it in one large pan, of several small ones.
