  1. Take a quart of very thick cream, and mix with it some fine sugar and orange-flower-water.
  2. Boil it.
  3. Beat up the whites of twenty eggs with a little cold cream.
  4. Strain it.
  5. When the cream is upon the boil, pour in the eggs, and keep stirring it till it comes to a thick curd.
  6. Then take it up, and strain it again through a hair sieve.
  7. Beat it well with a spoon till it is cold, and then put it into a dish.
