  2. If they are dead examine the gills, which should be red and hard to open, the eyes bright, and the body firm and stiff, if fresh.
  3. There are in general covered with a kind of slimy matter, which, if clear and bright, is a proof of their being good.
  4. This slimy matter may be easily removed, by rubbing them with a little salt.
