For flavouring and topping
Instructions (5)
  1. Prepare the omelette base as per the previous recipe.
  2. Just before turning the omelette onto the dish, place two spoonfuls of preserves in the centre.
  3. Sprinkle sugar over the preserves.
  4. Salamander the omelette.
  5. Serve.

721. Omelettes of Preserved Fruits, viz. Currant Jelly, Raspberry and Strawberry Jam, Apricots, Peaches, Cherries, &c., are made the same as the last, but, just before turning on your dish, put two spoonfuls of preserves in the centre, sugar over, salamander, and serve.
