Croquettes

Croquettes are made from the same preparation as the last
egg ↝ Eggs, Grade A, Large, egg whole [Dairy and Egg Products]
bread-crumb ↝ Bread, crumbs, dry, grated, seasoned [Baked Products]

Garnish

mashed potatoes ↝ Potatoes, raw, skin [Vegetables and Vegetable Products]

Sauce

blanquette of turkey or fowl ↝ Turkey, Ground, raw [Poultry Products]

Make croquettes from the same preparation as the last recipe.
Shape the croquettes into small pieces, two inches in length and the thickness of your finger.
Dip the croquettes in egg and bread-crumb.
Fry the croquettes.
Arrange the fried croquettes in a circle upon a border of mashed potatoes.
Serve with blanquette of turkey or fowl in the centre.

Turban of Croquettes à l’Epigramme.—Croquettes are made from the same preparation as the last, but made up into small pieces, two inches in length and the thickness of your finger; egg, bread-crumb, and fry the same, dress in a circle upon a border of mashed potatoes, and serve with some blanquette of turkey or fowl in the centre.
