  1. Stone the cherries and set them over the fire in the preserving pan.
  2. Let them simmer in their own liquor, and shake them in the pan.
  3. Put them by in China common dishes.
  4. Next day give them another scald, and put them, when cold, on sieves to dry, in an oven of a tempered heat.
  5. Twice heating, an hour each time, will do them.
  6. Put them in a box, with a paper between each layer.
