  1. Blanch and pound four ounces of almonds, and a few bitter, with a spoonful of water.
  2. Add four ounces of sugar pounded, a spoonful of cream, and the whites of two eggs well beaten.
  3. Mix all as quick as possible.
  4. Put into very small pattypans.
  5. Bake in a pretty warm oven under twenty minutes.
