twelve yelks of eggs ↝ Egg, yolk only, raw [Eggs and omelets]
six whites of eggs ↝ Egg, white only, raw [Eggs and omelets]
the peels of two lemons grated ↝ Lemon peel, raw [Fruits and Fruit Juices]
one pound of flour of rice
eight ounces of flour ↝ Flour, 00 [Cereal Grains and Pasta]
one pound of sugar pounded and sifted ↝ Sugar, NFS [Sugars and honey]

Instructions (6)

Beat twelve yelks and six whites of eggs with the peels of two lemons grated.
Mix one pound of flour of rice, eight ounces of flour, and one pound of sugar pounded and sifted.
Beat the mixture well with the eggs by degrees, for an hour, with a wooden spoon.
Butter a pan well.
Put it in at the oven mouth.
A gentle oven will bake it in an hour and a half.

Another Rice Cake.

Beat twelve yelks and six whites of eggs with the peels of two lemons grated. Mix one pound of flour of rice, eight ounces of flour, and one pound of sugar pounded and sifted; then beat it well with 224the eggs by degrees, for an hour, with a wooden spoon. Butter a pan well; and put it in at the oven mouth.
