  1. Beat up the whites of three eggs very stiffly.
  2. Add 4oz. of caster sugar and one teaspoonful of essence of vanilla or orange flower water.
  3. Mix very gently.
  4. Put paper over a baking sheet, and put the mixture on in small teaspoonfuls.
  5. When half is used, add a few drops of carmine to make the remainder pink.
  6. Bake in a very slow oven till they become hard, when they easily come off the paper.
