[2 Removes.] Roast fillet of beef, Poivrade sauce. 2 Entrées: Purée of pheasant, with poached eggs. Scallops of sweetbreads, with Soubise sauce. SECOND COURSE. Roast partridges. 3 Entreméts: Omelette, with fine-herbs. Lemon pudding. Blanc-manger in glasses.
