  1. Pound the almonds to a paste with the gum arabic.
  2. Mix the cream and milk, and heat gently.
  3. Add the almond paste and stir until dissolved.
  4. Strain the mixture through a fine sieve.
  5. Sweeten to taste with sugar and flavour with vanilla.
  6. Pour into a mould and set in a cool place.
